Shrimp Scampi with Zucchini Noodles Ingredients1 lb shrimp (peeled and deveined)2 zucchini1 lemon4 garlic cloves2 TBSP EVOO1/4 cup white wineInstructionsPour the olive oil into large sauté pan and cook for 1 min on med-low heat then add minced garlic for about 2 min.add in shrimp and cook on each side for about 2 minwhen shrimp is pink and cooked through remove with slotted spoon and put to the side (keep the garlic in pan if possible)turn heat to medium and add the lemon juice and wine, cook for 2 minadd zucchini noodles and cook for about 2-3 minWhen done add shrimp back in for a min or soI added pink Himalayan sea salt while cooking shrimp to both sides (it depends on how much you like)
