You are not primarily reacting to histamine in food. You are reacting to a nervous system and immune system that is chronically activated — and your body’s ability to clear that activation is impaired at the biochemical level.

Mast cells are immune cells that live throughout your body — in your gut lining, your skin, your airway, your brain. In a regulated system, they activate in response to genuine threats and then quiet down. In MCAS, they are chronically overactivated — not just by food, but by stress, hormones, temperature changes, smells, medications, supplements, and sometimes nothing identifiable at all.

The methylation component makes this significantly more complex. Histamine is cleared from your nervous system through a pathway called COMT — catechol-O-methyltransferase. COMT requires methyl groups to function. If your methylation cycle is bottlenecked — often due to MTHFR variants or upstream methylation dysfunction — histamine clearance from the neurological and hormonal pathways slows down. Estrogen clearance slows too, which worsens mast cell reactivity in a feedback loop.

This is why you react to things that make no sense. It’s not food sensitivity in the conventional meaning. It’s a sensitized system with impaired clearance.

Why standard approaches aren't working
